There’s a lot going on in this salad.. almost too much to include in 1 title!
Vegan, Vegetarian, Plant-based, Dairy-free
Total time: 30-35 minutes
Recipe serves: 2-3 people
1/2 cup cooked freekeh
1/2 cup black beans
1/4 cup hemp hearts
2/3 cup cucumber, chopped
1 avocado, chopped
1/2 cup green onion, chopped
1 tablespoon red chilli flakes
For the dressing, whisk together:
juice of 3/4 lime
1 tablespoon vegan mayo
1 teaspoon avocado oil
1/4 teaspoon pink salt
1. To cook your freekeh simply combine 1/2 cup freekeh grains with 1 cup of water in a rice cooker or in a sauce pan. If you’re cooking on the stove, cover and bring to a boil. Once boiling, reduce to low-medium heat and let your freekeh cook for approximately 13-17 minutes. Keep checking and stirring your freekeh frequently to ensure it’s not sticking to the bottom of the pot.
2. While you’re waiting for your freekeh to cook you can prepare your other ingredients and dressing.
3. Once your freekeh is done, let it cool for approximately 10 minutes. After your freekeh has cooled you can combine it with your other salad ingredients. Next drizzle with your dressing and mix well.
