Lemon Ginger Freekeh Salad

Some of you may be wondering, what is freekeh? Freekeh is a grain made from green durum wheat, and similar to quinoa it’s full of protein and fibre. Actually.. freekeh has more protein and fibre than quinoa, making it a really healthy and nutritious choice!
I find that freekeh definitely has a somewhat strong “nutty” taste. If you’re unsure about freekeh, simply substitute it out for quinoa in this salad.
Vegan, Plant-based, Vegetarian, Dairy-free
Total time: 25 minutes
Serves: 2-3 people
  • 1/3 cup freekeh grains
Mix in:
  • 1/3 cup cilantro, chopped
  • 2/3 cup chickpeas
  • 3/4 cup avocado, chopped
  • 1/2 cup tomato, gutted and chopped
  • 1/2 cup spinach, loosely chopped
For the dressing:
Whisk together the following ingredients. If you want a stronger ginger taste, simply do 2 tbs. lemon juice and 2 tbs. ginger.
  • 2 tbs. tahini paste
  • 1 tbs. vegan mayo
  • 1 tsp. olive oil
  • 4 tbs. lemon juice
  • 1 tbs. ginger juice, (I used a garlic press to get the juice of the ginger)
  • 1/4 (or) 1/2 tsp. fine pink salt (depends on how much salt you prefer)
Top with:
  • Sesame seeds
Enjoy! Also, this salad pairs lovely with garlic toast!
