This is the easiest side dish you’ll ever make. It’s also perfect to serve for a family BBQ, party, or simply just for any day of the week!
Total time: 30 minutes
Recipe serves: approx. 3-4 people
2 + 1/2 cups diced tomato (or approx. 10 tomatoes)
1 cup diced mango (or 1 mango)
1/2 cup finely chopped cilantro
1/3 cup diced white onion
1/4 cup minced jalapeño (or 1 jalapeño)
3 tablespoons fresh lime juice
1/2 tablespoon extra virgin olive oil
1/2 or 1 teaspoon cumin (depends on how much flavour you prefer, I added a full teaspoon)
1/4 teaspoon sea salt
1 teaspoon hot sauce or 1/2 teaspoon cayenne pepper (optional)
1. Prepare your diced tomato, mango, white onion, minced jalapeño and finely chopped cilantro. Add to a large bowl, and mix together.
Just a side note on the cilantro, to ensure there’s no extra water on the leaves you can pat it dry by placing it between a paper towel or cloth to remove any excess water.
2. Next, add your lime juice, extra virgin olive oil, cumin, sea salt and hot sauce or cayenne (both are optional) into your large bowl. Mix everything together.
3. Finally, serve with a side of baked tortilla chips, guacamole, vegan sour cream – or whatever else you prefer! This side dish also pairs perfectly with tacos and burritos!
