Spinach & Salsa Tofu Scramble

First time ever tofu scramble, and I loved it! Which is why I’m sharing this delicious and easy recipe with you guys. I only just recently started eating tofu myself, so I wanted to come up with a simple, quick and delicious recipe for a tofu scramble. If you guys like spinach and salsa, you will LOVE this combination.
Vegan, Plant-based, Vegetarian, Dairy-free, Gluten-free
Total time: 20 minutes
Serves: 1-2 people
Ingredients:
  • 1 tablespoon avocado oil (or other preferred oil)
  • 1 garlic clove crushed or minced (I prefer to crush with a garlic press)
  • 3/4 cup tofu crumbled & packed tightly (I use medium firm tofu, don’t crumble your tofu right away you will need to drain it first, see step 1)
  • 1/4 cup salsa of your choice
  • 1/4 cup shredded spinach (packed tightly)
  • 1/4 teaspoon thyme (or other preferred spice, paprika is nice too)
  • Dash of salt & pepper (optional)
Instructions:
Step 1: First you will need to prepare your tofu. If you’ve purchased tofu in brine (water), you will need to remove some of the excess water from your tofu. You can do this by lightly wrapping it (before you crumble it) in a paper towel and placing it between two plates for 10 minutes or so. After draining it, you can crumble your tofu in a bowl. For the recipe you will need approximately 3/4 cup.
Step 2: Now heat your avocado oil and garlic in a frying pan on medium heat for about a minute. Next add your crumbled tofu. Stir occasionally for about 5 minutes. While you’re waiting, prepare your shredded spinach and grab your salsa and thyme.
Step 3: Next, add your spinach, salsa and thyme to your tofu scramble and reduce to low-medium heat. Mix the ingredients well (trying not to completely crumble the tofu), and stir occasionally for 3-4 minutes. When your scramble is done, remove from heat and season with salt and pepper (optional).
You may wish to present your tofu scramble on a bed of spinach for extra protein and iron! You can also serve your scramble with a dollop of salsa and more spinach on top. Or you can add a few slices of avocado, like I did. Either way, this tofu scramble is delicious and I highly recommend you try it at least once!
