Sushi Bowl

I’m not going to lie. When I first started with this recipe, my intention was to actually make sushi. But unfortunately that didn’t turn out, and fortunately I put together this amazingly delicious sushi bowl instead! If you’re craving sushi but too lazy to make it, try this delicious sushi bowl. It’s super easy and quick to make!
Vegan, Vegetarian, Plant-based, Dairy-free
Total time: 25 minutes
Recipe serves: 2 people
  • 1 cup sushi rice
  • 2 tablespoons apple cider vinegar (to soak rice in)
  • 3/4 cup water
  • 1 tablespoon rice wine vinegar
Desired amounts of the following:
  • Avocado
  • Purple yam
  • Cucumber
  • Green onion
  • Cilantro
  • Bean sprouts
  • Ginger
  • Wasabi
  • 1 seaweed sheet cut into thin pieces
  • Soy sauce
  • Sesame seeds
1. First you will need to soak your sushi rice before you cook it. To do this, simply combine your rice and apple cider vinegar in a large bowl of cold water. Let your rice soak in this mixture for 25-30 minutes. Soaking your rice in apple cider vinegar before you cook it helps remove arsenic from the rice. If you want you can actually soak your rice in this apple cider vinegar mixture overnight! Once your rice is done soaking, simply drain it from the mixture.
2. Once soaked, you can now cook your rice. In a rice cooker, or on the stove, combine your 1 cup of rice with 3/4 cup water. If your cooking on the stove, bring your rice and water to a boil, and then let your rice cook for approximately 15 minutes on medium heat. Stir your rice occasionally to ensure its not sticking to the bottom of the pot.
3. Now is a good time to also cook your yam. In a small pot of boiling water, boil your medium sized purple yam for approximately 13-18 minutes (the time really depends on the size of your yam). Check to see if your yam is cooked by placing a fork in it.
4. While you’re letting your rice and yam cook, you can begin to prepare your vegetables. Cut your desired veggies into small bite sized pieces.
5. Once your rice and yam are done, you can now assemble your bowl! Place your rice on the bottom and top with your veggies! Finally finish with soy sauce, ginger, wasabi, seaweed and sesame seeds!
