Funky Monkey Banana Nice Cream

Ooey-gooey peanut butter and chunky dark chocolate banana nice cream anyone?! I’ve been making banana nice cream for a while now (almost every day!), but for this one I wanted to attempt to re-create Ben & Jerry’s Chunky Monkey Ice Cream. If you watch my videos on Instagram, you’ll know that I accidentally called this flavour Funky Monkey. So I’m calling my re-creation ‘Banana Funky Monkey Nice Cream’. Minus the walnuts (that the original flavour from Ben and Jerry’s has) this nice cream is full of bananas, peanut butter and vegan dark chocolate. Try it for yourself, I promise it will not disappoint!

Total time: 15 minutes
Recipe serves: 2 people


For the nice cream:
  • 3 frozen bananas
  • 1/3 cup chocolate coconut, almond or soy milk
  • 1/2 tablespoon vanilla extract
  • 1/4 cup peanut butter
For the chocolate sauce:
  • 60 grams of vegan dark chocolate
  • 1/2 tablespoon coconut oil
  • 1 tablespoon peanut butter
  • Pinch of sea salt
To mix in:
  • 1/2 banana cubed
To top:
  • Frozen raspberries
  • Coconut flakes
  • Other 1/2 of the chocolate sauce



Step 1: Find a sauce pan and bowl similar in size so that you can place the bowl on top of the sauce pan. This is how you will be melting your dark chocolate mixture. Once you find your sauce pan and bowl, fill the sauce pan with a minimal amount of water and set it to boil on the stove. Do not add your bowl on top quite yet.
Step 2: While you’re waiting for your water to boil, you can prepare your frozen bananas. If you’ve previously prepped your frozen bananas prior to putting them in the freezer, skip this step. If not you will need to run your frozen bananas under warm water, and then peel them by carefully slicing away the banana peel. You can attempt to peel them by hand, however I find that the peel gets stuck to the inside of the frozen banana, and slicing the peel away with a knife is much easier.
Step 3: Once your water has boiled you can now (very carefully) place the bowl on top of the pot, and reduce the heat to low. Grab an oven mit before you do anything! The stem underneath the bowl will quickly heat the bowl up, and it’s going to be VERY hot. Don’t touch the bowl with your bare hands. You can now add your dark chocolate, peanut butter, and coconut oil to your bowl. Mix occasionally with a spoon, but don’t leave the spoon inside the bowl, as it too will heat up very quickly.


Step 4: In a food processor or blender combine your 3 frozen bananas, chocolate dairy-free milk, vanilla, and peanut butter. Blend on medium to high speed until a smooth texture forms. Set aside.
Step 5: Your dark chocolate mixture should be melted by now. Remove from the stove with an oven mit, and set aside.
Step 6: Carefully fold in 1/2 of your dark chocolate mixture into your banana nice cream. You will want to do this fairly quickly while your banana nice cream is still very cold, and your chocolate sauce is very hot. The differences in temperature will cause the chocolate sauce to form chunks in the nice cream (that will later melt in your mouth!). You can now also add your cubed banana.


Step 7: Scoop into your bowl and top with frozen berries, coconut flakes and more dark chocolate peanut butter drizzle!


I hope you guys enjoy this recipe! It’s seriously so good and perfect for when you’re craving something sweet but not entirely unhealthy!
