Easy Meat-less Burritos

I’m so thrilled to have Amanda Tracey from St. John’s, Newfoundland as my first guest blogger. She was kind enough to share her delicious vegan burrito recipe with us!

My name is Amanda Tracey and I run the food blog All She Does is Eat. Megan kindly asked me to share a burrito recipe with you guys!

Burritos are the BEST! They are one of my favourite quick meals to make. Depending on what you put in them, they are a normally very healthy and definitely a delicious choice. The one I am going to share with you today is my favourite lazy recipe that anyone can make!

What you’ll need:

1 can red kidney beans (black beans work too)

¼ cup onion – diced

1 tsp chili powder

1 tsp taco seasoning

1/3-1/2 cup mild taco sauce

½ cup rice (I used white minute)

Pre-package Guacamole

Burrito wraps

Chopped iceberg lettuce

In a medium sized pan, heat up your onions for a few minutes. Add the kidney beans and stir. Then add the taco sauce, chilli powder and taco seasoning. Continue to stir onto the mixture is heated throughout.

Cook your rice according to the package. Prepare any side dishes you may want to serve with the burritos – I made fries!

Stuff the burritos with the bean mixture, cooked rice, guacamole and lettuce! Fold from the bottom up – tucking in each side as you roll.
